Elderflower Cordial

Teena Mahon, Ballyvolane's Chef for the last 5 years has just made a huge batch of elderflower cordial. Our staff have been on the road for the last two weeks picking wild elderflowers from the hedgerows all around northeast Cork. We use it to make Elderflower Bellinis which are now standard for all our weddings. We also always have Elderflower Fizz on offer for the non-drinkers. We use it for flavouring panna cotta. We put it the bedrooms for the guests to enjoy during their stay and it is available for sale at O'Brien Chop House in Lismore.
INGREDIENTS
- 74 elderflower heads
- 9 litres of water
- 4.5 kg sugar (granulated caster sugar)
- 170 g citric acid (buy from pharmacy)
METHOD
Boil water, sugar and citric acid to dissolve, remove from heat. Add lemon zest, lemon juice and flowers. Transfer to bucket or tub and leave in fridge covered for 2 to 3 dasy to infuse. Stir daily. Strain the liquid mixture and either store in fridge or freezer for longer term. Will keep for up to a year. Makes fantastic Elderflower Bellinis, Elderflower Lemon Fizzes for the non-drinkers and Elderflower panna cotta. Available for sale at O'Brien Chop House. Enjoy.
